This was very good. Next time I will omit the water and try decreasing the half and half because it wasn't as thick as you would expect a chowder to be. Very tasty.

This is one of my favorite soup recipes. It's super easy to throw together. I made changes based upon what I had on hand and it's pretty low fat. I used ground chicken instead of chicken breast, chicken stock instead of bullion and water, fat free half and half, about 1/2 bag of Trader Joe's roasted corn (this is what made the soup amazing) instead of creamed corn, no cumin as I didn't have any and about 1 cup of salsa instead of tomato since I didn't have one. I've done it with the cheese and without and it's good either way.

So delicious!! I added a can of garbanzo beans and a can of corn, which gave it just the right texture. The garbanzo beans complemented the soup really well and also gave it additional protein. Also substituted chicken stock for the boulion and water.

Very yummy. It really is more like tortilla soup than corn chowder though. I froze some and saved it for later and it reheated well.

I love this recipe!! I tweaked it a little by reducing the amount of Green Chiles and leaving out the hot pepper sauce, but then putting a bowl of chilies out when serving so people can add the amount of "heat" they prefer. I also add, in addition to the sprig of cilantro, a dollup of sour cream and seasoned tortilla strips on top for presentation.

This was soooo good even the kids loved it. I didn't add any tomato, hot pepper sauce, or cilantro. I left the diced green chiles out of the kids chowder but added Jalapenos to the adult chowder...delicious.

I altered this recipe slightly to make it healthier and it still came out great. I used 2 cups of fat free half and half instead of the full fat version, and only half the amount of cheese that was recommended. Still was delicious and everyone loved it.

This soup was great!! I did add a can of sliced potatoes to the soup and a can of crab meat. This made is sooooo good! I love spicey food but have to take it easy because we have little ones in the house. So me and my hubby just sprinkle red pepper on the soup while in our bowl! Perfect!

This soup is amazing! Definitely a crowd-pleaser and great for a quick-fix comfort food. Recipe is fantastic as-is, but I also add a small-diced potato, for texture. Serve with hot sauce and tortilla chips!

My husband said this is one of the best soups I've made!! I did make some changes . . . was looking for a regular Corn Chowder recipe & decided to try this one without the Mexican additions, so did not add the hot sauce, green chili's & tomatoes, and used less cumin. Then, we ended up adding those at the end as garnishes. It turned out really good!

I cheated and used a rotisserie chicken but we really enjoyed the flavors of this soup. I served it with Tostitos Scoops and used those as little spoons. Not very filling but really warmed us up on a cool night. I also thickened with some corn starch dissolved in water. Will probably make again!

Great recipe!!! The only thing I changed was the cheese. I could not find monterey jack by itself. I used slices of colby & monterey jack that I crumbled up.
