OMG!! I loved it! Cooking can't get any faster and easier than this meal. I made the whole thing in a casserole dish that I also put in the oven..even clean up easy :)
I started by sauteeing chopped shallot and then added the chicken (that I had marinated in olive oil, taco seasoning and liquid smoke for 3 h or so). I should had drained the black beans but it was still great, just scooped out some of the extra moisture.
I used 1/4 C homemade salsa (D's recipe from this site) and 1/4 green chile sauce (El Pinto, mild), crushed some Mission tortilla chips and used a Mexican cheese blend.
I topped the meal with lowfat plain yogurt and even my 2-year-old loved it!
