I used over a pound of chicken and was glad I did. I followed the recipe exactly otherwise and added about 1/2 cup water.(1/4 would have been fine) We liked it but I think rice would have been a good addition. My picky kids did not like it but at least ate the chicken. Good flavor.

Wow is this recipe adaptable. I also added onions/garlic when I cooked the chicken. I used black bean soup which really added a lot of flavor as well as 1 cup cooked rice. My family is very picky but they loved this. Would even be good without the cornchips and placed in a wrap. Yum!!

This recipe was very easy, and one that is easily builded onto. I sauteed an onion along with the chicken, along with a couple fresh banana peppers from my garden. I added a few dashes of Franks RedHot Sauce to the mixture, and used a full 15oz can of corn. I had a packet of mexican rice on hand - so I prepared that, and spread it in the bottom of the casserole dish - and I also doubled the cheese called for. It turned out very yummy, and I will definatly be making this again.

Great idea, I also made some changes...I used 4 boneless chicken breast cooked in olive oil and cubed (small) and taco sauce to avoid drying out. Added undrained (1 can)pinquito beans and (1 can )undrained chili beans a jar of salsa, a full packet of taco seasoning, a tablespoon of my favorite hot sauce.In a 13 x 9 placed a layer of meat mixture then tore up corn tortillas and made a good layer on that, then a couple handfuls of cheese, then a layer of meat mixture and tortillas and cheese to top it off. Fabulous idea.... Cooked as directed and served with sour cream and tortilla chips. Yumma yumma! Thank you

This is an excellent starter recipe, it's very versatile which I love. I cooked my chicken, added garlic salt and chopped onions. Then added the taco seasoning, creamed corn, red kidney beans, mild salsa, 1 cup of rice, and 1/2 cup of sour cream. It's delicious! I plan to rip up a tortilla as suggested by another reviewer as I don't have taco chips, and then add some shredded cheese. It's huge! It is a tad spicy, so next time I will only add a tbsp of taco seasoning. I would definatly not put in a whole package unless you like it really spicy. Thanks!

The Best STARTER Recipe for a quick weekday night dinner. I didn't have taco seasoning mix but that's easily remedied with chili powder, cumin, garlic, onion, cilantro and chipotle seasoning. I did have some taco rice mix so I cooked and spread it on the bottom of a large casserole dish, then spread a can of (drained and rinsed) black beans. This way the black beans don't get crushed and mushy. I sauteed the chicken with some chopped onions, seeded and thinly sliced pablono pepper, two large chopped tomatoes, can of corn, can of Rotel, can of sliced black olives and added extra cilantro, cumin, chili powder and chipotle seasoning. After draining some of the juices from the skillet, I then took the chicken mixture and added a can of tomato sauce and placed it all on top of the rice and beans in the casserole. I then topped this with mexican shredded cheese and let bake in the oven till nice and hot. Since we only had a 1/4 bag of broken tortilla chips, I put those on the bottom of the plate and then the casserole with a dollop of sour cream on top. Yummy! I will definitely do a bunch of variations depending upon what I have on hand. Thank you Suezqz_64 for the recipe!

Yum! Even my very picky son (verrrrry picky) liked this ok. I followed the suggestion of sauteing onion and garlic with the chicken and layering it with tortilla chips and cheese twice. Very tastey and high in protein to boot!

Delicious!! Everyone loved this. I didn't have tortilla chips so I used dorito's instead. I added at least twice the amount of salsa and tons of cheese. Absolutely loved this and will go into the dinner rotation.

Yummy! A great dish to take to a potluck, as it's easy and quick to make, and relatively inexpensive. It's also easy to adjust to your preferences with different add-ins. As most other people did, I also added quite a bit more salsa. I'm not sure how well it would have worked the other way, but it came out very nicely this way!

Great, easy recipe! I rinsed the beans (I think you should always rinse black beans), but I used the liquid from the corn in lieu of water per suggestions. I cooked chicken with diced onion, and next time I will saute some red and green peppers to add to the chicken and onions.

My husband couldn't stop himself. I used a Ranchero sauce that he made before and it turned out really good. We both talked about it and next time we might layer the middle with chips, as well as, the top. Great idea, very easy.

I thought this rocked! My entire family absolutely loved it! The only thing i did different was i used doritos instead of tortilla chips. It turned out soooo good!! I will definantly make this many times in the future! Awesome recipe!

Wow! This turned out good! I live in Korea so Tortilla Chips can be hard to find, so I used regular tortillas instead. I used 1 cup of salsa and sprinkled a little bit of dried cilantro in it as well. I stir fried an onion prior to adding the chicken with some garlic powder. I also made some corn bread to be served with it. Wow, this was so easy to make. I think the only thing I would have served with it as well would be some sour cream.

I took other reviewers hints and added minute rice and cream cheese. I also added the black beans and corn with their liquid. Turned out great. Great recipe. Definitely a keeper!
