It frustrates me to no end that the people in my family are leery of "unusual" foods. Every time I make something they have never heard of or tasted before, it takes an act of GOD to get them to eat it without a preconceived notion of how much they are not going to like it. So, I stooped to trickery. I made each of them taste it but would NOT tell them what it was. I put it on a fork, said, "Taste this." They bit into it and LOVED it. When I told them the name, they were extremely surprised. This is a very tasty dish that even those with "normal" palates will enjoy. I made this exact to the recipe. Not sure if I will change the recipe up at all (I always end up doing that) but it was delicious AS IS.

This is my go-to meal when I'm pressed for time. It's SO quick and easy, and it's hard to find healthy recipes that fit that description. (I use reduced-fat cheese and baked corn chips. Still great!)

This was good. If you are using frozen fish make sure you drain real good ours was very wet because of it.

I tried the Mexican Baked Fish recipe tonight. I didn't have the corn chips or the sour cream, but it was delicious and very easy. I fixed a side salsa of onion, tomato and avacado which went over the fish and also atop our rice. My husband rated it a 5!

This is a keeper. I didn't change a thing. I get tired of reading reviews that rate a recipe high then tell you how they completely changed the recipe. I put extra corn chips on because I like the crunch but that's all and that doesn't change the recipe all around. I will make this again for sure.

This was such a yummy & quick meal for when you don't have much time to spare. I didn't bother measuring anything in a recipe this simple. Just put as much or as little as you want depending on what you like! I used haddock instead of cod & it was still soo yummy!! Even my hubby who's not much of a fish fan said it was good!!

So easy and really tasty! I also broiled it for a couple minutes after baking it, which made it nice a crispy. Served with black beans and rice. You don't really need the avocado.

So good, SO easy! I was skeptical when I assembled the ingredients, but when it started cooking and filling the house with a delectable aroma, I had high hopes. We were not disappointed. I followed the recipe to a T, although I did use (thawed) frozen cod fillets, and made sure they were patted quite dry before cooking, so they wouldn't be mushy. Also, I just eyeballed the amount of cheese and salsa. Husband and I cleaned the entire pan, rolling them up in flour tortillas we heated on a gas burner. This one's a keeper!

This was a hit! I'm not a big fish fan but this tasted great! I served it with mexican rice, guacamole, salsa and blue corn chips, and it is definitely something we'll be having again in our house.
