This salad is fantastic and festive. I take it for potluck Christmas functions and I'm always asked for the recipe afterward. It is absolutely delicious!! The dressing is enough for 3-4 salads, depending on how much you like on your salad.

I made this for our Christmas dinner and it got rave reviews from our guests. It was super easy to make! I loved the cranberry dressing, I left it on he side so people could add it to the salad or not if they wanted. I also put three different cheeses people can use with it; fresh shredded Parmesan, crumbled feta and blue cheese.

I wasn't impressed with this salad at all - and I had such high hopes for it. I took it to a Christmas party, there was another green salad there as well, but no one hardly touched mine. I found the dressing to be both too sweet and too vinegary, if I were to make it again (which I probably won't) I think I would skip the apple juice concentrate (too sweet) and cut the vinegar to 1/3 cup, and use cranberry juice (not concentrate) to make up the difference in liquid.

This is a great holiday salad. I used feta instead of parmesan because that is what I had on hand and I used toasted walnuts for the same reason. The dressing was great, but I think I'll use less sugar next time, it a little too sweet with the apple juice concentrate and sugar.

Made this for a large gathering and it was a hit. Will definitely make again. I couldn't toast the almonds, but I added them. I also added walnuts because I happened to have toasted walnuts on hand. I added crumbled blue cheese too which I personally love on salads and it blended very well. I didn't really measure the dressing ingredients, just guestimated them which proves its very forgiving. I had to substitute Red wine vinegar for the Apple Cider vinegar, but it was still great. Plus you get all the apple taste you need from the apple concentrate.

What an amazing salad!!! So much flavor and crunch! I made it to accompany a turkey dinner and it turned out to be the hit of the night. The recipe made three times more dressing than I needed so I sent the extra home with my guests and they were thrilled. Great salad, thank you so much for this recipe! It will be a staple around my home not only at Thanksgiving and Christmas but year yound.
