INGREDIENTS
1/4 cup sugar
1/4 cup water
6 tablespoons lime juice
2 tablespoons minced fresh mint
2 teaspoons grated lime peel
1 1/2 teaspoons ground ginger
8 cups melon balls or cubes
MINTED LIME DIP;
1 cup sour cream
2 tablespoons sugar
1 tablespoon lime juice
2 teaspoons grated lime peel

DIRECTIONS
In a bowl, combine the sugar, water, lime juice, mint, lime peel and ginger. Add melon balls. Cover and refrigerate for 1-6 hours. Thread melon onto wooden skewers or toothpicks. In a bowl, combine dip ingredients. Serve with melon.

A very tasty, elegant, and refreshing summer dish. I would *not* recommend doing what I did: treating it like a fruit salad and dumping the dip all over the fruit. The effect was a little overwhelming. Either make it as a fruit salad and leave out the dip (still *very* good) OR do what the recipe says and use the dip as it was intended.
