I made this for a potluck and it was a hit! After marinating over night, the vinegar and onions were no longer overpowering and became almost sweet. It was super easy and I'll definately make it again!

This is my favorite way to eat tomatoes! Light and fresh, the good tomatoe taste comes through. Use good Balsamic. I sometimes top with crumbled feta or blue cheese and black olives, use fresh basil confetti for added color and flavor. Perfection!
Great recipe and simple too...Perfect for Summer..I used Olive Oil that has been flavored with a crushed garlic clove and it added just a little extra.
Growing up in our lttle Italian getto in Chicago we ate an identical "salad" almost everyday.. all summer long. It was GREAT! Passed down from my Great Grandmother (who added a leaf or two of fresh mint to hers) it's also very healthy. She and my GGrandDad came here from Sicily, married, as teens quite early in the last century. I was lucky enough to know GGrandDad (who lived to be 98) as a kid and learned a lot. (How to ID edible fungi and other edible "weeds" for example). But the best, and most outstanding memory from their home was the smell, and taste - OF THE FOOD!!!

I've been making my own variation of this all week with all fresh veggies from my garden. Added small cukes, green pepper, yellow tomato, red onion chopped. Didn't use as much olive oil or Balsamic as called for since we don't like the veggies swimming. Added just enough to cover and also added a little honey to take the bite out. Delicious...DH had 3 helpings!
This recipe turned out great! I didn't have the shallots, so I just left them out and made it with the tomatoes. I also added a little chopped fresh basil to the mix. My husband loved it and even took the leftovers to work the next day to let his 2 coworkers try them. They loved it as well!
Perfect side dish instead of a salad. I also had two warm multigrain baguettes that we enjoyed dipping in the dressing. Yum! I also added fresh garden cucumber slices around the serving tray and it just added to the presentation and tastiness.
