Ingredients

  • 2 cups water
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 (10 ounce) box couscous
  • 1 (13.75 ounce) can artichoke hearts, drained, finely chopped
  • 1 large tomato, cut into small dice
  • 1/3 cup chopped fresh parsley
  • 1/3 cup crumbled feta cheese
  • 1 tablespoon fresh lemon juice
  • ground black pepper to taste

Directions

  1. Bring the water, olive oil, and salt to a boil in a saucepan. Pour in the couscous, cover, and immediately remove from heat. Let sit covered 5 minutes. Fluff with a fork. Stir in the, artichoke hearts, tomato, parsley, feta cheese, and lemon juice. Season with black pepper.
