1 cup reduced-sodium vegetable broth
4 green onions, bias-sliced into 1-inch pieces
1 tablespoon margarine or butter
1 clove garlic, minced
3/4 cup quick-cooking couscous
1 (6.5 ounce) jar marinated artichoke hearts
1/2 medium red bell pepper, thinly sliced
2 cups Morningstar Farms® Meal Starters™ Chik'n Strips
1/2 cup pitted kalamata olives
1/4 cup crumbled feta cheese

DIRECTIONS
In small saucepan combine broth, onions, margarine or butter and garlic. Bring to boiling. Stir in couscous. Remove from heat. Let stand, covered, for 5 minutes.
Drain artichokes, reserving marinade. In large skillet cook bell pepper in 2 tablespoons of reserved marinade over medium heat for 1 minute. Stir in Chik'n Strips and 1 tablespoon of remaining reserved marinade. Cook and stir for 1 to 2 minutes more or until heated through.
Spoon couscous mixture onto 4 serving plates. Top with Chik'n Strips mixture. Sprinkle with olives and cheese.

I really enjoyed this dish...it's quick and tasty. But, to not make it so dry we drizzled a little Caesar Italian dressing over our plates to coat lightly. Also, nowhere in the recipe does it say to add the artichoke hearts so I added them at the very end just to heat them up so they wouldn't fall apart. We eat a lot of the chick'n strips...it's best to let them brown before eating. Will definitely make again for those busy evenings!

I Will definetly be making this again. I read the other review about the blandness, so I used an herbed couscous mix, and prepared to directions, and also drizzled with the vinegrette the artichokes were in. That made it really good, otherwise,they were right, it would have been bland.

Awesome recipe! If you use garlic/rosemary (or some other herbed variety) couscous it's dead on. My chik'n was perfect. This one will be used over and over.

GREAT recipe! I didn't buy the marinated artichoke hearts, so I used Kraft Roasted Red Pepper Parmesan salad dressing instead of marinade. I also halved the broth and used half water. VERY good! I will make this again and again. Thanks!

one star because the site won't let me give it a zero. this is bland bland bland. and the morning star chik'n is pretty rubbery. the whole house did not care for it. maybe i did something wrong but it seemed pretty straightforward. thanks for sharing, but i would not reccommend this one

I doubled this recipe and had this for my husband and a guest. They cleaned their plates and asked for seconds. I give it five stars for its good taste PLUS ease of preparation. (I used parm coucous and water and it was just a touch salty for my tastes. I think it would have been best to stick with the original recipe...)

This was tasty, light and filling. It was a one dish meal and the different textures and tastes were great. We usually do not love the "fake meat" but the morning star chicken strips are terrific and we will make this regularly.

My husband and I both liked this recipe a lot. It was so easy and so good. I followed another reviewer's advice and use a flavored couscous, which was good, but it was a little too salty in addition to the vegetable broth. So, I would definately make this again, but using a flavored couscous and water as the base, to keep it from getting too salty.

Followed directions exactly, and while it was generally very good, I am only giving 4-stars because it would have been better if I had altered it to match reviewers suggestion of using flavored couscous.
