I altered this a fair bit, and really liked it! 3 times the tomato, 1/2 the olive oil, no onion or parsley, added some cucumbers, fresh chives and onion powder. I used lemon juice from a bottle instead of freshly squeezed.

this is awesome! i ran out of lemon juice though :( but it still tastes really good. its light and filling, i added extra parsley, and extra tomoato is super yummy. i aslo added a little less olive oil. thanks for the recipe!

Great color, texture and flavor! I added some yellow summer squash to the ingredients, and used lime instead of lemon. This is a nice salad!

I made significant changes to this to give it some pizazz - hence the 3 stars. I added a diced cumcumber, 1 tablespoon red wine vinegar, 1 tsp dried oregano, and doubled most everything else. It's definitely a good base to start with and then play with your own extras.

My husband and I both loved this. It was easy to throw together and chill while I made Balsamic and Rosemary Grilled Salmon. A nice summery salad, and really quick to make.

I loved this. It was exactly what I used to buy at the health food store for much more of course. If you don't love "healthy" food, it isn't something that will change your mind. My husband loves chickpeas but wouldn't eat this. His loss!

Four stars as written but five stars with my changes. I used a red onion and about 8 seeded Campari tomatoes. I also added a 4 oz package of crumbled basil & tomato feta cheese and a tablespoon of red wine vinegar. I served this in whole-wheat pita bread with romaine lettuce. Delicious!

This recipie is delicious! I added basalmic vinager to it, but I think a red wine vinager would also be good. You can throw in any extra produce you have in your kitchen. We used different peppers, mushrooms, red onion, and even some apple. You don't have to marinate it over night but if you do I recommend using larger pieces of vegetables because they soften as they marinate.

This is a great summer salad. I made some changes per the reviews & my taste: balsamic vinegar, cilantro (instead of parsley), feta cheese, red onion, black olives. Marinating overnight is a good ide but not totally necessary. I like it over a bed of spinach or just plain. Thanks for the healthy, tasty salad!

Love it! Did make some adjustments based on taste (I love onions, but don't think it needs a whole one), and availability - couldn't find any type of parsley in Okinawa, so I used a Tablespoon of Goya's Recaito, "Cilantro Cooking Base." Great lunch, thanks!!

I sorry to say that this did not live up to my expectations at all. Thought it would be wonderful and although it is not bad - the flavours never seem to meld (overnight). I doubt I would make this again without serious changes. I really don't know what is missing. Perhaps it is texture, might try adding some black olives or perhaps some small bits of a mild feta cheese.

I marinate all of the ingrediants in a balsamic vinegar and extra virgin olive oil overnight and serve with Hot crusty Italian bread.

Great salad! With the lettuce and spinach scare, I've been looking for salad options, and this is perfect. I added a touch of wine vinegar to this recipe and would use a red onion next time, but it is a big hit with the family.
