I've been looking for more ways to include healthy grains into my family's diet, and this salad worked perfectly as a side. It was yummy, satisfying, and easy to make! I'm going to have the leftovers for lunch today.
I didn't change anything, although the olives I bought at the deli were marinated in olive oil and mixed with pine nuts which was a nice addition to the salad.
I might add some chili pepper flakes next time, just to give it a little kick.
