I used my own ranch dressing blend in this recipe, not only to save money but to cut down on salt. I added in a couple large handfuls of matchstick carrots and a little bit of minced red onion. I also added in a handful of pre-shredded colby-jack cheese, not only in the meatloaf but on top as well.
I had to add a lot of extra ketchup, but I think it was because I added the cheese and carrots.
My oldest raved about it and it was the only thing my youngest would eat on his plate. My husband didn't say much, so I think he thought it was passable as did I. I'd make it again, in a pinch. It went really well with the Best Mashed Potatoes.
