Yummy! Left out kidney beans because I didn't have any. Used sauted onions and garlic, and shells instead of spaghetti as suggested in another review. Used Rotel for the stewed tomatoes. So fast and easy.

I used this recipe in my restaurant as "soup of the day" with minor changes. I knew it to be a hearty soup, and the weather has been COLD, but this is Southern Virginia, and I wasn't sure how it would go over. The first day, I had to sample it out a lot and didn't sell much of it. But the next day!!! Sold out of a double batch, and it was even Better the second day. I did cut up fresh celery, carrots, and onions, and used 3 parts beef broth to 1 part water, and macaroni. It's a "regular" on the menu now on Thursdays with the pit cooked ham sandwich. A KEEPER.

Amazing recipe! I only made a few changes. We like to have onion and garlic in meals like this, so I omitted the minced onion and sautéed fresh onion and garlic in some olive oil. Then I didn't have any frozen veggies, so I used some corn and green chiles. The rest was as written and it is fabulous! Thanks for a great meal.

Surprisingly good. I didn't have beef bouillon, so I used chicken bouillon. I used a 16 oz package of frozen Italian vegetables, which included broccoli, cauliflower, and zucchini, instead of the mixed vegetables and macaroni instead of spaghetti. It makes a hearty flavorful soup that, considering my changes, is very flexible to what one has on hand.

I actually quite liked this recipe. Very simple and quick. I used great northern beans instead of kidney as that's all I had. Also used shells instead of spaghetti - it's prettier. Nice flavor.
