3 cups water
1 teaspoon salt
5 tablespoons butter
2 3/4 cups potato flakes
1 onion, minced
1 (8 ounce) package cream cheese
1 1/2 cups milk
1 (6 ounce) can French-fried onions

DIRECTIONS
Preheat oven to 200 degrees F (95 degrees C).
In a medium saucepan bring water and salt to a boil over medium heat. Add butter and stir in potato flakes, onion and cream cheese. Stir in milk until potatoes are soft and fluffy. Spoon into a 9x12 inch casserole dish and top with fried onions.
Bake in preheated oven for 45 minutes.

c'mon now, this dish is easy and just needs a little tweaking...i used half and half instead of the water, added 3/4 cup grated sharp cheddar cheese, a few bacon bits and for a quick side dish it wasn't too bad.

Pretty basic recipe...you do need to add for flavor. I used fresh mozzarella and the half and half instead of the milk. Good and easy...thanks for the post.

My boyfriend wanted to write Allrecipes and try to get you 6 stars, Collin! We loved this. It was super easy, got rid of my can of fried onions, and had plenty of flavor. I snipped some green onions of top for color. It's perfect as is!

yum yum yum! that should say it all. my husband, myself and even our small children fell in love with this dish, doesent make to much of a mess, nor does it take alot of time to make. i added some real grated cheese to the reciepe but other wise it was wonderful and we will make again. thank you so much

:-) double yum! my husband compared it to some mashed potatoes from the cheesecake factory - which he referred to as the best potatoes he had ever had -- now these are his favorite - and mine, too.

I started with leftover "skinny" mashed potatoes. I added an egg and because I didn't have cream cheese on hand I added shredded Monterey Jack Cheese. Great starter recipe.

This was really good! Mu husband asks for it again and again...not the greatest for losing weight but then again all the good ones aren't.
