Wow! I rushed through this recipe, barely reading any of it except the ingredients--I mixed everything together (except the butter and the hot sauce), substituting dried minced onion flakes for the onion, and added a little Parmesan. THen put the butter in a skillet and read the recipe--oven? Oops! Oh well, I had already started in the skillet, I would just try it. It was great!! They held together perfectly and were light and crispy and melt-in-your-mouth good. This appears to be one of those recipes you can't mess up--even when you're in a super-big hurry! :)

Great! I used about 3 1/2 cups potatoes and seasoned salt instead of other seasonings. I did do egg wash, but found they stuck to sheet even with non-stick. Will try without next time. I look forward to mixing it up with other additions. Will make again for sure.

Yummy! I used leftover garlic mashed potato's and added 1 cup of shredded cheddar chesse to the mix. Instead of using the egg white brushed on top, I just flipped the pancakes in the last 5 minutes of baking. They were golden brown on both sides and heal their shape well.

This is a GREAT way to use up dinner leftover mashed potatoes for a Saturday hot family breakfast together. What I love about this is I've tried to achieve this potato pancake to no avail in the skillet...the 'pancake' would always fall apart. This recipe is great because there's not hot oil or margarine to soak up in a skillet. The oven method gives a perfect patina, and it marries so beautifully when you eat it with a egg over medium on top! YUM-O! A biscuit or toast and you've got breakfast people! :)

Very good basic recipe. Cooking in the oven was key. I used non stick spray on the cookie sheet. They held their shape and didn't stick to the pan. Let the pancakes cool a few minutes before removing from the sheet like you would a cookie. I'll use this recipe from now on as the base, but will experiment with different herbs, spices or cheeses to see what I can come up with in the future. Thanks for the recipe.
