Made with 1/2 onion and 2 green onion, cilantro and chopped bacon, also fried in bacon fat ( the only way to fry potatoes) Were great, will watch fat intake the rest of weekend.

My dad used to make thse when I was little, and he was also from Tennessee. I've been looking for a recipe for a while, because mine never seemed to turn out right. I use the same ingredients but I fry mine like Daddy used to. Thanks so much.

These turned out great! I changed it some by adding a little minced onion, and about 1/2 c. shredded cheddar cheese. I didn't use the hot sauce, but I added both eggs to the batter, and fried in a skillet with a little butter. (That's how Grandma used to do it). Next time I may just use some cooking spray instead of the butter. The kids liked them with ketchup, and the adults liked them with sour cream. I'm sure I'll make them again, because it's a great way to use leftovers!

The taste of these were really good. I'm not sure what I did wrong, but my potato mixture came out runny. I ended up making drops and frying them in a pan. I will try to make these again.

I was going to make these using leftover mashed potatoes, but someone ate them before I had the chance. Instead, I made up a 1 1/2 cups instant mashed potatoes and proceeded with the recipe, adding half a cup flour total because the potatoes were so soft. I'd imagine that with cold "real" mashed potatoes, 1/4 cup would be perfect. Anyway, I ended up with something like thick pancake batter and sauteed them in a skillet for about 4 minutes each side. Left off the egg wash. They turned out great! I like the hot sauce taste. We had them with ketchup. I will make these again and continue to use the skillet method. Thanks!

I tried several times to duplicate the potato cakes my mother (from Knoxville)used to make. This recipe is it except she added garlic, parsley and chopped green onions. Very tasty!!

I made these because I had so many mashed potatoes left over from Thanksgiving. I thought they were okay, but I'm not sure if I'll make them again. They weren't as good as I expected them to be.

These were really good. I'll admit I didn't read the instructions very closely and accidentally put 2 eggs in with the potatoes. So, instead of being able to form cakes, I really made "drops" of batter. Oh, and since it was so soupy, I cooked them in a skillet. That mistake aside, the mix itself is very good. I served it as a side dish with low fat sour cream.

I'm only giving this 4 stars because, to me, potato cakes need to be cooked in a skillet (which I did)! Otherwise, they were great. I haven't had these since I was a kid: I was in need of some comfort food, and this was it. Ate it with ketchup, just like "way back when". I was going to take a picture, they looked so good, but they got eaten in a flash :)

My dad used to make me mashed potato pancakes when I was little and I loved them. These are just like them. The only change is that I sauted them in about 2 tablespoons each of butter and olive oil. I cooked them for about 3-4 minutes on each side in the same pan I sauted the onions. It gave them the crispy outside and soft inside. My whole family loved them!

I don't bother with the onion but I do like to add a little shredded cheese to the mixture. You can also cook these in a pan sprayed with PAM for about 5 or more minutes per side. I always serve with applesauce and sour cream on the side. The kids love them!

yummo!! I'm only rating it a four because it had too much onion for my tastes. I will definately make these again. I just dropped spoonfulls on the cookie sheet and popped them in the oven, then when they were 3/4 of the way done i flipped them and then lightely pressed them with the spatula. They came out flat as a pancake, brown on both sides, and i never got my hands messy!!!

These were good, but bland. With some changes, these are AMAZING. Def. 5 stars. Here is what i did: I cooked 4 slices of bacon. Once it was cooked, i sauteed an onion, 2 chopped garlic cloves, and some fresh thyme in the fat. I spooned this mixture over the potatoe cakes. Then i added some sharp cheddar cheese and chives on them and sour cream on the side. WOW THEY WERE GREAT my whole family went crazy for them!!!!

I made these tonight. My husband who usually can't stand potato cakes, loved them. So did my children. However, I did not like them that much, and Im the one that usually loves potato cakes! They were just alright to me.

I thought these were really good! Surprisingly, my mashed-potato-loving 4-year-old didn't care for them (I was shocked by that!) and my husband wasn't crazy for them either, but I thought they were great! Really easy, too!
