Directions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Bring a large pot of water to a boil. Cook cauliflower in the boiling water until tender, about 10 minutes; drain and set aside.
  3. Melt butter in the same pot over medium heat. Stir cauliflower, milk, and sour cream into melted butter.
  4. Mash cauliflower in the pot using a hand blender until creamy.
  5. Transfer cauliflower mixture to a baking dish; evenly cover with bread crumbs and season with salt and black pepper.
  6. Baking in the preheated oven until bread crumbs are lightly browned, about 30 minutes.

SO Good, in order to make it smooth I placed it all in a blender. I also added a few carrot which make it a more pleasant color. Added a Tea. of garlic and a an envelope of dry Hidden Valley Ranch dressing.

The texture didn't come out creamy no matter how much I mixed!! I didn't like it :(

I loved mashed cauliflower. This is an excellent recipe. The cauliflower comes out creamy and bursting with flavor.

Very good! For those who had an issue with smoothness, try this: once you drain the cauliflower, pop it back into the pan again with the lid on (not on the heat) and let stand for 2-3 minutes before proceeding. I used a lot less breadcrumbs and reduced fat sour cream. The immersion blender got it all nice and smooth and I was able to bake it right in the pan I used on the stove for easier cleanup.

Delicious! Did add some grated parmesan after tasting. An immersion blender makes this a snap.

Liked!! My husband is not a huge fan of cauliflower.. So 3 stars is god! Look forward to trying again! Might try cooking the CF in broth for added flavor!

I altered it a bit because we are dairy free :( but I put a tbsp of margarine, a clove of garlic, s and p, 2oz manchego (sheep milk) cheese and some water in the food processor. OMG! So Good!

Really loved this recipe. It didn't have that strange aftertaste that a lot of mashed cauliflower has. I read the reviews about the consistency so I also used a blender to make it creamy and smooth before baking it. Next time I want to add some Parmesan cheese. Also instead of regular breadcrumbs I happened to have a mixed bag of tries units and crackers that I ran through a chopper to make homemade breadcrumbs. I'm sure regular breadcrumbs are just as good
