This was an interesting change for us. We’ve enjoyed bacon-wrapped scallops often, but never like this, with the additions of maple syrup, Dijon and brown sugar. Even after omitting the brown sugar we still found this a little too sweet for our tastes. Scallops are already rich and sweet, but I did like the slight maple flavor, so if I was to try this again I’d omit the sugar and cut back a little on the maple syrup too. Also, I marinated the scallops for a mere half hour and that was plenty. I served this with "Almond Wild Rice" and "Spring Asparagus Salad," both recipes also from this site.
