Marinated Grilled Eggplant

  1. Sprinkle garlic salt over both sides of eggplant slices; let sit for 30 minutes to release water.
  2. Place eggplant slices in a large dish; drizzle with fish sauce. Add basil, balsamic vinegar, and olive oil; stir to evenly coat. Marinate for about 15 minutes.
  3. Preheat grill for medium heat and lightly oil the grate.
  4. Remove eggplant from marinade and arrange on preheated grill; cook until tender, occasionally basting with marinade, about 5 minutes per side.

  • Cook's Note:
  • If grilling isn't your thing, cut eggplant into 1-inch cubes instead of slices and bake for 10 minutes at 400 degrees F (200 degrees C). Serve with flat bread, kalamata olives, and feta cheese.

I didn't bother with the garlic salt, just marinated and grilled. Delish!

Followed recipe completely. My husband and I love eggplant and balsamic vinegar so I was sure we would like this, but we did not. The balsamic flavor was too strong for one thing, but I am not sure that was the whole problem.

This was delicious! My husband and I scarfed it down and didn't have to add any salt or seasonings. I followed the recipe exactly and it was perfect just the way it was! Make sure to baste the eggplant with the marinade throughout grilling. Thanks!

Perfect! I salted it and added the ingredients to the marinade, didn't even wait to let it sit before pan grilling it. Added grilled peppers and tomatoes.
