Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 1 clove garlic, minced
  • 1 1/2 cups uncooked white rice
  • 3 cups water
  • 1 (4 ounce) jar diced pimento peppers, drained

Directions

  1. Heat oil in a medium skillet over medium heat. Saute onion and garlic until golden. Stir in rice and saute until rice begins to brown. Add water and simmer for 10 minutes.
  2. Stir in pimentos. Reduce heat, cover and cook until all water is absorbed, about 10 to 15 minutes.
