I made some modifications and used some of the suggested mods.
1st, I made two batches of sauce, cutting the red wine vinegar in 1/2. I marinated the meat in 1/2 of the sauce for 2 hours.
I stir fryed the veggies in olive oil 1st as others suggested, and then set aside. Next I drained the marinade from the meat and cooked it next. then I added the veggies and my 2nd batch of sauce with some red pepper flakes, and cooked a couple of minutes. Served over rice and it was DELICIOUS!
I highly recommend cutting the vinegar in half or maybe more.
