I made these cookies for my class, and since there were so many, I passed some around to other school friends as well. After school, I was mobbed by hugs! It was unbelievable. I found out later that my teacher doesn't like maple syrup, but she adored these (she had 5 without thinking!). The dough was soft, but rolled fairly easily once covered in the sugar. I cooked mine a bit longer, too, until golden. This made them a little crunchier, but just as tasty and more travel-proof. I'm sure they are delicious when chewier, as well. Thank you for sharing!
