Things don't get much quicker than this mouth-watering side dish from Edna Hoffman. The Hebron, Indiana reader broils sliced eggplant before topping it with a speedy garlic-seasoned tomato sauce and a little Parmesan cheese.

Marinated Mushroom and Eggplant with Peanut Sauce

Lot 's of goodies dress up these skewers of mushrooms and eggplant: peanut butter, coconut milk, cumin, coriander, sunflower oil, ginger, lemon juice and garlic. They make a tasty marinade for before the grilling and a peanut sauce for after it.
