I scaled this to 4 servings, so I left out the ground beef and just used the ground sausage. I also left out the mushrooms as a matter of personal taste. And I think that cubed pepperoni would work better next time. The slices got dried out and were difficult for my kids to eat. I did have about 8 oz of riccotta cheese in my fridge that needed to be used up , so I blended it in to the mix and it made all the difference. A yummy cheesey creamy Itaian casserole! (Where did the idea of naming this Manicotti come from anyway??) Overall thumbs up.

I've been making a recipe like this for years, the only thing I leave out is the mushrooms, as they are not a favorite around here. Very good recipe, nice flavor and easy to prepare!

This was an EXCELLENT dish! I only made half a recipe and it made a huge casserole dish full (that I ate from for nearly a week)! I left off the pepperoni, and used some onion, Italian seasoning and minced garlic, for a slight 'punch', but otherwise, made no changes. I'm anxious to try it on my daughter when she visits from college soon!

Our whole family loved this. I only used 32 oz of spaghetti sauce, but it was plenty. The dish was still over flowing. This has such a unique blend of flavors that go so well together. Even our picky eating kids loved it.

it was pretty good...i added oregano and basil into the mixture. i think next time i make it i'll put cheese throughout the mixture, instead of just a layer on top. i like it to be cheesy all the way through! my husband LOVED it though.

I'm going to give this 4 stars because it sounds great..but I really was just asking a question. If I'm making this meal for 2 people, should I cut the recipe ingredients in half? Also what size pan is recommended? I'm new to cooking and don't want to use something too small or too big. Thanks!

A delectable, meaty dish--the only trouble I had was getting the entire casserole in a 3qt. baking dish, you might want to make 2 smaller ones and put one in the freezer :)

I used 1 lb. of ground beef and a little less than a pound of sausage, and fresh mushrooms. With the 1 lb. of pasta and 2 jars of sauce, my baking dish was overflowing! 1-1/2 lbs. of cheese seems like alot, but it came out really good! I will probably make this again, especially for potlucks.

I omitted the sausage (ground beef, mozzarella cheese and pepperoni was enough of a heart attack)I used fresh mushrooms crumbled into smaller pieces. Husband really liked it.
