I prepared this as a side dish to go along with grilled cheese sandwiches for a group of 110, most of which were high school students. It was outstanding!! Everyone loved it! I sized the recipe for 40 servings, and made two batches of it each in its own pot. I used 30 lbs of potatoes, no carrots, and used salted butter in place of the margarine. I had sour cream, chopped green onion tops, and bacon bits available for toppings. This soup is now a part of our regular menu!!
