Mama's Lasagna Scramble

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Bring a large pot of lightly salted water to a boil. Cook cavatappi in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 9 minutes. Drain and transfer to a large casserole dish.
  3. Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir tomato sauce, diced tomatoes, feta cheese, black pepper, onion salt, garlic powder, basil, oregano, parsley, and thyme into ground beef. Simmer until flavors blend, 5 to 10 minutes. Pour ground beef mixture over cavatappi.
  4. Bake in the preheated oven until bubbly, about 20 minutes. Let cool 5 minutes before serving.

I think I may just have to try this recipe out as there are days when I really want a lasagna but can't be asked to spend ages preparing it. A recipe which I did use last was this Beef & Bacon lasagna from Great British Chefs which turned out pretty well but does take 90 minutes =( It is worth it though especially as I doubled the creamy sauce

This is one of my go-to recipes on busy nights when I don't have time to make a traditional lasagna. This works just as well with ground turkey/chicken/sausage and I use mozzerella instead of feta. This is an excellent substitute for families who love Hamburger Helper but want to think "outside the box". I like to serve this with garlic bread and a tossed salad for a complete meal.

Super simple recipe; exactly what I was looking for. The flavor wasn't out of this world and it had a bit too much pepper for my taste, but it was a healthier version of a typical boxed dinner. I will be making this again, just cutting the pepper to 1tsp.
