This soup was absolutely delicious. My husband is very picky and he LOVED it - he took leftovers for lunch today so he could brag about it. I used the basic recipe and made very few changes. I baked the meatballs at 350F for 20 minutes and simmered everything but the pasta for a few hours. I used orzo instead of seashells and it soaked up a bit of the broth so next time I will add a cup or two of broth. This is a definite keeper! Thanks for sharing!

My husband was eating a canned version of this soup. He kept raving about it. So, I thought that I could probably make it home made. Found this recipe and made it. I also made my home made dinner rolls with it and it was a hit!!!!! I've made it 3 times in the past 2 weeks! Even made it for my mom who hurt her back and couldn't cook. She loved it! Thanks for submitting this recipe!!!!

I just finished making this soup..it is just as good..if not better than the restaraunts! I followed some of the advice and made a few alterations. I added garlic to the meatballs, and I browned them before adding them to the broth. I also added a little minced onion to the broth. All in all this is a recipe I will make again and again! Thanks for sharing it!

This is a GREAT soup! I used more chicken broth. Depending on the pasta you use, the pasta may soak up a lot of the broth, so it's good to have some on-hand for leftovers. I might try half gr. beef and half gr. pork for the meatballs, next time. I did fry the meatballs. I believe and the pork makes for more flavorable meatballs

This made a nice, hearty soup. The quality of the chicken broth is important in this recipe, so choose carefully. I baked the meatballs first and then drained them on paper towels to reduce the fat. The next time I make this, I'll add more chopped carrot, substitute onion powder or dried onion for the fresh onion, and add garlic powder to the meatballs.

Great Recipe. I would add more noodles. Be sure to use a lean hamburger. I used 73% lean and there was too much fat.

this is a great soup recipe, I made a few changes such as italian seasoning to replace basil, added minced garlic to the meatballs also added minced onion and garlic to the chicken broth along with about 2 TB spoons of lemon juice. YUMMY :)

I just loved this soup! I did make changes but I know the basic taste is there. I just wanted to make the meat balls a bit healthier so I used ground turkey, I used blended whole oats and added some ground flaxseed to make my measurement correct for the breadcrumbs. I feel I saved some fat calories and added a touch of fiber. And since I used Acina de pepe I used about twice as much. You get a good number of small meatballs with this also, maybe 80 or so. Really the best I have have ever tasted. YUMMY!

Fabulous recipe! Made a change though, sauteed meatballs and carrots, first in small amt olive oil. Everyone just loved this soup. I am planing on making it for the holidays!

This soup is great but I made so many changes I am not sure if the original recipe is what inspired the 5 stars. These are my changes: I added 1 tsp of minced garlic to the meatballs, I sauted the vegetables first, I browned the meatballs before adding to soup, I added a stalk of celery, I used Acini de pepe pasta, I used fresh basil in the meatballs and when everything was cooked and just about ready to serve, I added 3 eggs beaten with 1 cup Parmesan to the soup while I stired constantly. It was delicious and inspired by a soup that I had in Rome.

I thought it was very good. Everyone did eat it. My husband thought that meatballs didn't meld well with the chicken broth. If I used chicken instead of meatballs or beef broth instead of chicken broth, he would of liked it better. He still ate two bowls.

Talk about a marriage of flavor! This was wonderful. I made about 3 gallons (quadrupled the recipe) for some veterans and was really disappointed that I didn't have even a spoonful to bring home, but they sure were smiling. I only made a couple of modifications. First, I used 3/4 beef, and 1/4 ground pork for the meatballs. I made the meatballs ahead, (large marble size) and browned them in the oven at 350 for 20 minutes. Then, instead of using fresh spinach which was just too darned expensive, I used well drained frozen chopped spinach, and added diced celery, then some diced cooked chicken. Believe me, no one complained. Also, intead of shell pasta, I used the smallest I could get as it is more for show instead of flavor anyway. And, because I was serving so many, I just added the parmesan cheese right into the broth. OH! One thing..if you do go beyond doubling this recipe, cut way back on the eggs. You will use more meat, but won't need as many eggs. Okay...I'm done now.
