Excellent soup. I made a few changes---fresh garlic in the stock while it was boiling, added 1/2 cup of noodles and I made the meatballs very small and flashed browned the meatballs. Terrific recipe--in my recipe box it goes.

This soup was PERFECT for my neighborhood's Italian Progressive Dinner. (I had 'soup/salad' course). I received rave compliments. I also precooked the meatballs in the oven the night before. Doing that also got this most labor intensive part out of the way. I tried to use a melon baller to shape them, but it really didn't work well for me. I then had this simmer to cook in my crockpot the entire day of the party. Yum!

Very good recipe! The meatballs need a little more seasoning. They were somewhat bland and also very time consuming to make. Overall the soup tastes great on a nice cold day!

I like this soup a lot. I tweak it by using beef broth because I tend to use chicken broth quite a bit in cooking and it's nice to have some variety.

My husband and I both enjoyed this recipe. I did notice however that the meatballs were lacking something, maybe a bit of salt? Could have just been the parmasean I was using. I also added some parsley and a bit of dried basil to the soup. Thanks for the recipe!

Wonderful! Very close to real wedding soup. Agree that to make the meatballs less time intensive, roll out the beef (or turkey, both work fine) into a long 'rope' then cut meatballs. Also makes it easier to keep them small.

Very good soup. I added mushrooms and used escarole instead of spinach. Also used whole wheat pasta. Excellent for a low calorie meal. Be sure to use extra lean meat !! This is the 2nd time I've made it and its perfect

This is one of my favorite homemade soups--I really haven't met anyone who doesn't like it. I cook my meatballs in the broth for a little longer before adding the other ingredients. Add a little extra water when you reheat the left-overs and the soup won't be so salty--Enjoy

this is VERY yummy and very easy, just a bit tiring on the wrists rolling all those teeny meatballs. i tried the trick of rolling them on the counter and just couldnt get it to stick. its a bit of work, but its worth it.

Doubled this recipe for our large family - turned out wonderful! The only thing I changed is making my own chicken broth/soup. Drained veggies (onion, celery, carrots, several potatoes). I used the cooked carrots from the broth instead of cutting my own up. Meatballls were fantastic - cook them in broth - I didn't see grease rise up at all. This is the BEST Italian Wedding Soup I've ever had. It puts the canned Italian Wedding Soups to shame. Try it - you will not be disappointed.

Made this soup today and it was just as good as everyone said. I used Acini di Pepe in place of pasta. Didn't add to the soup though let everyone add their own as it really would have soaked up the broth. Easiest wedding soup I have ever made! Definite keeper.
