This is my variation of a standard recipe. I like fresh basil and a little lemon rind, so those are basically my only changes. This is a quick and easy soup with flavors that impress all.

A large batch of traditional Italian Wedding soup. This soup offers plenty of meat, carbohydrates and veggies. Perfect with Italian bread. For the pasta, I use acini di pepe, but you could use any small shape you desire, like shells or orzo.

Chicken broth, ground beef, and escarole are the primary ingredients of this traditional soup. The ground beef is combined with bread crumbs, egg, and Parmesan cheese to make bite-sized meat balls, which float amid the escarole broth.

My mom used to make this during cold winter nights to warm us up. Now I make it all the time because it not only warms you up, it soothes the soul. This recipe is perfect for using up leftover rice and pasta sauce. You can change the recipe to suit your tastes; use your favorite jarred sauce if you don't have any homemade, or use your own family's meatball recipe! 

Oriental Hot 'n' Sour Soup

Fresh, sliced ginger root, rice wine vinegar, and sesame oil give delicious flavor to this Asian-inspired soup. Bamboo shoots offer extra crunch, and diced red bell pepper and sliced mushrooms provide lovely color.
