Old-Fashioned Honey Pecan Pie

There 's lots of honey and pecans in this pie. Honey is heated on the stovetop until bubbly, and then chopped pecans, butter, eggs, vanilla and nutmeg are stirred in. This thick, luscious filling is poured into a prepared pie crust and baked in the oven until set.

During the '30s, my mother made this pie for the ladies in her club. I'd hurry home from school so I could help her and then try a pie myself! It soon became such a family favorite. Mother made it part of our Christmas meals.

PECAN PIE was always requested by the family for special occasions. When we became empty nesters, it was hard to give up some of our family favorites when we found that leftovers were too much for the two of us. This is the treasured 'Golden Oldie' that my grandmother made so often whenever we'd come to visit. Grandma grew her own pecans, and we never tried of cracking them and picking out the meat when we knew we'd be treated to her special pie!

'AS A SPECIAL TREAT when making this pie, Mom would sometimes place a marshmallow in the center of each lattice square, or, in honor of the Christmas tree we had just brought home, she'd cut Christmas tree shapes from the pie dough and place them on top of the pie.'
