I've made this recipe twice now and loved both batches. I've learned I can grind my flax seed in the blender, and it worked well. Also, I shredded the carrot using the fine shredder on my kitchenaid. The first time I used a standard box grater. I liked both ways, but prefer the finer shred. I cut out 1/4 cup sugar because the coconut was sweetened. AND I used corn oil because that's all I had. I like the pecan pieces to be sizeable, about the size of a pencil eraser. First batch made 21 muffins, second made 22. I'm going to get 24 next time to keep calorie count down. For a healthy breakfast I have one muffin, 1/2 cup mandarin orange sections (or 1/2 cup other fresh fruit), and a cup milk.

In fairness, I did not use the flax. Instead, I added equal amounts of the two flours. That is the only change I made. THEY WERE WAY TOO SWEET. Next time, I will cut the sugar by at least half. To watch calories that much more, I turned them into 56 mini muffins with about 60 calories each. Aside from the sweetness, they were delicious.

Made this with the following changes: 2 cups whole wheat flour, 3/4 brown sugar, 2 whole eggs, 3/4 applesauce, 1/4 vegetable oil (that's all I had), 1/2 cup craisins, 1 green apple grated, 1/2 cup crushed pineapple. Topped with walnuts and fresh grated cinnamon. Yum! All other ingredients kept the same. Next time I will use half white sugar, half brown as they were not sweet enough for me. My daughter LOVED them though which is great for me! ;) This is a fabulous recipe anyone can make their own! Thank you!

I made this recipe just as it is written, using all Organic ingredients. My husband and I both love these muffins! They taste so good and are so healthy, it makes you feel good about eating them! The batter is thicker and I found that dividing the batter into 18 muffins is just right. I found mine was more than 3/4 full right about to the top and even a little heaping, and they turned out to be perfect in every way, size, texture, moistness, taste...this will definitely become a new favorite in our household!

Awesome recipe! I used mandarin orange juice for the orange juice, craisins for the raisins, no coconut, and just put the nuts on the top. Fantastic! I wonder if there is any way to cut down on the sugar more...they were great, we are just watching calories!

These muffins are great. The only change I made was I used 3 whole eggs instead of the 4 egg white and 1 egg. Since 4 eggs white = 2 whole eggs. I also recommend NOT over mixing the batter. I forgot the apple the second time I was baking them and had to mix more and they turned out a little tough

We enjoyed these. Just FYI, for others who are not familiar, the batter is really thick and has more fruit/carrots/nuts than muffin...which is fine, I just didn't anticipate it and was afraid I did something wrong when I got ready to bake. Maybe I did, but they were still good! I also only had 12 muffin cups, so I baked the rest of the batter in the bottom of my loaf pan for about 10 extra minutes and cut it into bars.

Very moist! Great use for flax seed. This recipe takes some time, but my 11-yr. old happily prepared a double batch by herself. Four stars because we think it would be much better with crushed pineapple instead of/along with apple. In this case, I would double the baking soda because of the extra acid.

I love these muffins. I was looking for a good healthy muffin and this is perfect. I didn't use apple sauce, I used a banana, no raisins, used cranberries, no pecans, used almonds and I used 2 whole eggs. A little time consumeing but well worth the effort!

My kids loved these! I used crushed pineapple and pinapple juice instead of applesauce/OJ and craisins, also used apple butter instead of canola oil as other member recommended and they were a hit!

So yummy. I added 1/2 cup of millet for crunch. I skipped the pecans and coconut because I don't like them. I was too lazy to grate carrots, so I skipped those!

these were the best I've had. wonderful. instead of regular sugar, I used 1/2 cup of brown rice syrup and 2 T maple syrup. I also used 3 t egg replacer plus 2 T water. I didn't use the raisins or apple and increased nuts and coconut to 1 c each. they were absolutely delicious. thank you

These muffins were so good and so healthy!!! A great combination. And the recipe is very forgiving...I used crushed pineapple instead of applesauce and left out the coconut (personal preference) and increased the nuts and raisins by 1/4 each to substitute for the coconut. They tuned out great! And my kids loved them! Great recipe...thank you!
