Yummy Pesto Mashed Potatoes

Simply by adding pesto to boiled potatoes then mashing, adds a delicious alternative with a hint of colour to the usual mash - and guess what - the kids just love it too! Try using different kinds of pesto. You could also add some sun-dried tomatoes and top with a little grated cheese and black pepper.

This is a version of Mashed Potatoes that my husband actually likes. You can use any type of potatoes and change the amounts of butter, sour cream, and milk to your taste. I like it with russets myself.

Our family loves these creamy and comforting potatoes. Garlic and other herbs make them so mouth-watering, I serve them just plain-no gravy is needed. For an extra-buttery taste, I'd suggest using Yukon Gold potatoes.
