These little 2-inch tarts are delicious and perfect for a grown-up afternoon tea. The tart shells are lined with pastry and filled with a dollop of raspberry jam, and then a spoonful of a sugary almond filling. The tops are decorated with a bit of pastry and slipped into the oven to bake. This recipe yields a dozen. 

English Butter Tarts

There 's no butter in these delightful, diminutive tarts, but you 'd never guess. There are, however, lots of brown sugar, corn syrup, raisins and shortening in them. They bake up sweet, buttery and delicious. 

Phyllo Tarts with Ricotta and Raspberries

Miniature tart shells are lined with buttered sheets of phyllo dough. A sweetened and spiced ricotta cheese filling is spooned onto each tart shell, and then they are all baked. When cool, arrange fresh raspberries on top and dust with confectioners ' sugar.

Tiny tart shells are fitted with rounds of prepared pastry. Then the sweet, buttery pecan filling is spooned in and the tarts baked until set. Pipe a whipped cream rosette onto each, and sprinkle with crushed pecans. 

Egg Tarts I

The dough for these miniature tarts is sweet, buttery and flaky, thanks to the egg yolk, butter and confectioners ' sugar. The filling is a simple egg custard made with evaporated milk and a smidgen of vinegar. Each of these dainty baked tarts are the perfect size for one person. This recipe yields 10 tarts.

Strawberry Tarts

This easy recipe makes twelve miniature tarts, the perfect offering for a tea party. A cooked apple glaze is brushed over the bottom of each pre-baked tart shell. Sliced strawberries are spooned in and more apple glaze is poured on. The tarts are chilled and served with a dollop of whipped cream.
