I loved the simplicity of this recipe but I tweaked it a little bit. I heated some orange marmalade and added it to the egg wash. I'm very green in the learning process but I figured the sweetness might go well with the salty, crunchy thing. After the wet and dry flavors, I used some (spray) Canola oil on both sides. Then, instead of a skillet, I put it in a preheated convection oven at 375 for a little less than 10 minutes. I turned it once so both sides got caramelized and browned. It was moist and had a lot of flavor, I was extremely pleased. Now, the real test is when I prepare it (fresh) for my wife in about 3 hours.
