Macadamia-Crusted Salmon

"One evening when my husband and I went out to dinner, he ordered a salmon dish that sounded interesting. It was wonderful. When I tried duplicating it at home, he said mine was as good as, if not better than, the original. That made my day!"

INGREDIENTS
2 salmon steaks (1 inch thick)
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
1 egg white
1/2 cup chopped macadamia nuts
2 tablespoons vegetable oil
2 tablespoons butter or margarine
2 tablespoons minced fresh parsley
1 teaspoon lemon juice
Hot cooked rice

DIRECTIONS
Sprinkle fish with salt and pepper. In a shallow bowl, whisk egg white until frothy. Dip fish in egg white, then coat with nuts. Gently pat nut mixture onto fish.
In a skillet, cook fish in oil over medium heat for about 6-8 minutes on each side or until fish flakes easily with a fork. Meanwhile, melt butter. Stir in parsley and lemon juice. Drizzle over fish. Serve with rice.

Great dish and so easy to make. However, I did not have macadamian nuts so I substitued for slivered almonds. We loved it. Next time I'll try it with macadamian nuts, I'm sure that will be just as good if not better. I think any nuts will serve as a good substitue. Thanks for the great recipe.

My husband absolutely loved it - but I have my reservations. I also added grated parmesan to the macadamia nuts and I think that was the redeeming quality, otherwise it would have been bland. I was disappointed in the lemon butter sauce - too buttery and not enough lemon! Should have been at least 1:1 butter to lemon ratio. Beautiful presentation however, that with the addition of parmesan made it an easy 4 star recipe!
