MInty Orzo and Peas

Ingredients

  • 1 cup uncooked orzo pasta
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 2 tablespoons butter
  • 2 cups frozen peas
  • 1 teaspoon grated lemon peel
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons finely chopped fresh mint

Directions

  1. Cook orzo according to package directions. Drain and set aside.
  2. In a large skillet, saute onion and garlic in butter until tender. Add peas. Cook for 2 minutes or until tender. Add the lemon peel, salt, pepper and orzo; heat through. Stir in mint. Serve immediately.
