Ingredients

  • 2 cups white sugar
  • 1/2 cup shortening
  • 2 eggs
  • 1 cup milk
  • 1 teaspoon distilled white vinegar
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup unsweetened cocoa powder
  • 1 cup boiling water
  • 1/2 cup margarine
  • 1/2 cup shortening
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 (3.5 ounce) package instant vanilla pudding mix
  • 1 cup confectioners' sugar

Directions

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Cream together 2 cups sugar, 1/2 cup shortening and eggs. Combine 1 cup milk plus 1 teaspoon vinegar. Add to mixture with vanilla, blending well. Set aside.
  3. Mix together flour, baking soda, salt, baking powder, and cocoa in a separate bowl. Gradually add to creamed mixture until well blended. Finally add the boiling water and mix well.
  4. Drop by rounded teaspoonful on to ungreased cookie sheets. Bake for 5 minutes. Remove to baking rack to cool.
  5. Cream margarine and shortening. Add 1 cup milk and 1 teaspoon vanilla, continuing to beat. Slowly add pudding mix and 1 cup confectioners' sugar.
  6. Assemble cookies by spreading filling on one side of cookie and then placing another on top.
