1 (20 ounce) can sliced pineapple
1 tablespoon brown sugar
1 teaspoon ground mustard
1 teaspoon garlic salt
1/2 teaspoon pepper
6 boneless, skinless chicken breast halves
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1/4 teaspoon dill weed
6 kaiser rolls, split and toasted
6 lettuce leaves

DIRECTIONS
Drain pineapple, reserving 1 cup juice and six pineapple slices (save remaining juice and pineapple for another use). In a large resealable plastic bag, combine the brown sugar, ground mustard, garlic salt, pepper and reserved pineapple juice; add chicken. seal bag and turn to coat; refrigerate for at least 2 hours, turning occasionally. In a small bowl, combine the mayonnaise, Dijon mustard and dill. Refrigerate until serving.
Drain and discard marinade. Grill the chicken, covered, over medium heat for 5-6 minutes on each side or until juices run clear. Grill pineapple slices for 1 minute on each side. Spread mayonnaise mixture on rolls. Top with lettuce if desired, chicken and pineapple.

I thought this was just OK. I didn't have a grill so I pan fried the chicken and poured the marinade over it after marinating the chicken all day. I cooked the chicken for four minutes on each side and it came out tender but I didn't taste any of the marinade which was a shame. I pan fried the pineaple ring first which really was all that I tasted on this sandwich. Also, the roll I used was too small for a large, thick piece of chicken. I would flatten the chicken before marinating next time and cut it in half, and use a heartier bread that is larger. My husband enjoyed this sandwich more than I did but he, too, found it difficult to eat because of the size. I served it with an artichoke dip & pita chips which went over better than the actual sandwich.

My sister gave me this recipe years ago. It's a big hit and a nice change from burgers. They're great with fresh pineapple slices. I like to go heavy on the dill in my sauce(I probably double the sauce and add 1 to 2 tsp dill and less mustard). Also, someone commented on how large the chicken breasts were for a sandwich. I slice a breast diagonally into about 3 slices for a large breast and end up with small bun size pieces. Also, sometimes (OK MOST of the time) I don't remember to marinate so I just sprinkle the chicken with a little garlic, salt and brown sugar on each side then grill. Just as delicious...maybe even better. They're also good with tomato and cheese on the sandwich. ENJOY!

These were incredible! I chose to marinate the chicken overnight (prepared after dinner the night before, so they marinated 24 hours) and they were phenomenal. Everyone really loved the sauce as well. Highly recommend this recipe.

Wow! This was amazingly good and good for you. The dressing is a must, I even used reduced fat mayo. Very simply to make. I have added this to my favorites and make it often. Thank you!
