INGREDIENTS
2 1/4 cups all-purpose flour
1 1/2 cups sugar
1/4 cup poppy seeds
1 tablespoon baking powder
3 eggs, lightly beaten or egg substitute equivalent
1 1/4 cups skim milk
3/4 cup applesauce
2 teaspoons lemon extract

DIRECTIONS
In a large bowl, combine flour, sugar, poppy seeds and baking powder. Combine eggs, milk, applesauce and lemon extract; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups about three-fourths full. Bake at 350 degrees F for 30-35 minutes or until muffins test done.

My daughter cut the sugar by 1/2 C, used half the amount of poppyseeds, and made these in my larger muffin tins. These were not sticky at all (?) and I could really taste the lemon. She say's "They are very delicious." We dusted with powdered sugar once cool...yum!

I did not care for this recipe. My hubby LOVES muffins & sweets, but he ate one bite of these & made a face & wouldn't finish it ... They were SUPER sticky to the touch, chewy, & REEEEEALLY sweet...TOO sweet! I will NOT be making these ever again! Pretty big disappointment ... :(

I like low fat food and usually only cook/bake them. But these were heavy, chewy, and did not taste good.

My husband doesn't like low fat foods at all and he really liked these. I read other reviews that said that these where chewy and I didn't encounter that at all. I did reduce the amount of sugar by 1/2 a cup and reduced the amount of poppy seeds by half. To make it even less calories I did half c sugar and half c splenda and we really enjoyed these with a little margarine on top.

if there were a NO star rating this would be useful. not only were there too many seeds-the extract flavor instead of real lemon I did not care for. i dont like to switch up or change ingredients, nor do i like to add more or less of others. its truly ANNOYING to see others reviews having just that. if your way is so much better-submit a diffrent recipe version!

They were OK, a bit heavy and chewy. The taste was good if you are looking for low fat.
