Juice from bottled hot cherry peppers is used to braise the browned steak. It cooks in under an hour with cherry peppers added for the final 5 minutes.

Lemon pepper, lemon juice, and tarragon vinegar add sparkle to tenderized and marinated London broil steak. The recipe can be multiplied to do enough meat for a party.

Zip Sauce

This is the famous zip sauce that goes with steak served locally in Detroit. It really brings out the best in beef, and adds a spicy punch to the flavor.

The secret to making less expensive cuts of meat tender is a good marinade. This one fits the bill. Mix up soy sauce, vegetable oil, ketchup, oregano, and three cloves of garlic, and then marinate the meat overnight. Grill, and slice on the diagonal.

A quick fix for an inexpensive cut of meat. Mix up soy sauce, vegetable oil, ketchup, oregano and one whole clove of garlic, then marinate the meat overnight.

Bill's Sauce

This is the basting sauce my Southern friend used when barbequing a whole pig. It makes a large batch that keeps well, up to 6 months in the fridge. I use it on pork roast, chops and poultry. Marinate the meat of choice and brush it often while grilling.

This recipe is delicious. I received it from my mother-in-law, who was a fabulous cook. Prepared on the grill, it's a real treat during warm-weather months. --Susan Wilkins of Los Olivos, California
