These were ok. You would think that they would have a lot more flavor than they do. It was easy, but not really anything special.

I'm assuming I must have done something wrong (like overcooked the potatoes maybe?) because mine were a rubbery chewy mess! Good flavor though, just not sure I'd make these again especially in the microwave.

The Only Way that these could be modified is that I addined some Veleeta Cheese in small pieces so it is creamy. However these are great and they tasted like easy scallop potatoes!

I just made these for my hubby's family Christmas dinner. They are time-consuming (I had to make 18) because I wanted to get the cheese/seasoning mixture in between all the slices, but they are delicious. I think they are worth the effort for a special occasion. If you're only making a couple of them - no problem, it's a great recipe. I did do the parbake method - microwaved them for 6 minutes, then "stuffed" them and then cooked at 400 for 20 minutes to finish.

These potatoes are amazing. I fix mine a bit different. I start by microwaving them for about 6-7 minutes to get them started cooking, let cool a little and then slice, drizzle with butter (mixed with a little EVOO) and top with the rest of ingredients. Bake, uncovered at about 400 for 20-30 minutes to finish them off. Fantastic!! (In my opinion, the rosemary is a definate must)
