Easy Shepherd's Pie with Garlic Romano Potatoes

This is a very easy shepherd's (cottage) pie that's topped with wonderful garlic and Romano potatoes. You can change the ingredients to add almost anything you like. Kids love this, and it's even better after sitting for a day. You should have most of the ingredients on hand so no trips to the grocery! You can substitute any cheese for the Romano, as well.

This is a no nonsense approach to Shepherd's pie with just the basics. Ground beef in a mushroom gravy, topped with cheese and mashed potatoes. 

Scottish Shepherd's Pie

Cubed ham is arranged in the bottom of a casserole dish, topped with creamed corn and briefly heated in the oven. Mashed potatoes are spooned on top, and then the pie is returned to the oven. Just before serving, it 's dotted with butter and slipped under the broiler to brown.

Living In: Belfast, County Antrim, Northern Ireland, U.K.
Looks similar to colcannon, but champ is native to the North of Ireland. It's made by blending scallions or green onions with creamy mashed potatoes. Great on it's own, served steaming hot with extra butter which will melt through it. But it's also the perfect side dish for good quality sausages.
