2 cups milk
1 1/4 cups sugar
1/3 cup lime juice
1 1/2 teaspoons grated lime peel
1 cup heavy whipping cream

DIRECTIONS
In a saucepan, combine milk and sugar. Cook over medium heat until sugar is dissolved and mixture reaches 175 degrees F. Cool to room temperature. Stir in the lime juice and peel. Freeze in an ice cream freezer according to manufacturer's directions.
Transfer frozen lime mixture to a bowl; allow to soften slightly. In a small mixing bowl, beat whipping cream until stiff peaks form. Fold into softened lime mixture. Allow ice cream to firm up in your refrigerator freezer for 4 hours before serving.

Not willing to take a chance on this unconventional method of making ice cream folding in whipped cream, I chose to make it in the traditional cooked custard method and added 3 egg yolks. The egg yolks made this ice cream richer, as did 2 cups of whipping cream and 1 cup of half and half. In addition to the refreshing lime flavor, this was without question one of the creamiest, most velvety smooth ice creams I've either made or tasted anywhere. I sure hope I never forget or lose this recipe!

AWESOME! I made it for a luncheon and it turned out great. Also this ice cream makes a good base for other flavors! Using it, I have made banana and strawberry ice cream too! Thanks!!

You really don't need an ice cream maker for this one! I just froze it in a tuperware instead. It was better than any store-bought ice cream. I think I am going to try the same recipe with different fruit flavors next time! It was so good!

Very refreshing. My family loved it. I did mess up and add the cream and milk at the same time with the sugar and it was still delicious and simple to make. Will definitely make again.
