Used long grain wild rice for a nuttier flavor and a toasty crunch. Served with homemade barbacoa, grilled veggies and taco bowls (corn tortillas shaped on muffin tins). Awesomely light flavor...perfect for summer.

I loved this, but tweaked just a little. I used Hinode's Jasmine ready rice. Omitted the butter, and used just a drizzle of olive oil. No salt, added a few shakes of cumin, garlic powder, and black pepper. Used about 3 tbsp of bottled lime juice (only thing I had). I used one cube of frozen cilantro. Plenty for me. I served with Baked Cilantro Lime Swai fillets and zuchinni spears. Yum! Thanks for the inspiration.

Great Recipe! I did make several adjustments. I made the rice in the rice cooker with a chicken broth cube, and added some Kaffir Lime Leaves (into the rice cooker) to give it a subtle lime flavor instead of the zest. Afterwards, I added only bit of lime juice for freshness. Had it with some Thai seafood soup I made; the rice complimented it well.

I tried this recipe tonight with the Key West Chicken. It went very well with the chicken! Rice was a little bland for me, but it was good especially with Coronas! hubby liked it! ;) thanks '

this is very easy to make. it just lacked the yummiest that I was hoping for. It didn't have quite enough flavor, I would probably make it again but add some other ingredients. Good base to go off of.

Really good and flavorful but mild. I scaled it back by half since only 2 of us were eating and used instant rice! Paired very nice with the rest of my dinner and was super easy to make. Thanks for the simple tasty submission!!

This recipe was pretty good it was not that flavorful though it had just a hint of lime. We doubled the lime to give it a zesty kick and that improved the taste.
