Delicious! I kept the ingredients the same (expect the oregano) but cooked it differently. I first browned bone in, skin on thighs in a pan with salt and pepper then transfered them to the crock pot and poured sauce over them. I did 5lbs of chicken so I quadrupled the ingredients (those of you with boys know why). 4 hours later I removed the skin and bones and shredded the chicken. This was a make ahead meal so when it was time to eat I put it in a pyrex 9x11 and baked to get a little browning on top. served with Baja sauce as another reviewer suggested (mayo,sour cream, lime juice, zest) which I think put them over the top, shredded cabbage and fresh cilantro. They were devoured! For a side dish I prepared the cilantro lime rice from this site. Sorry boys, there is only enough for a small snack left.
