There's no need to cook this scrumptious sauce of fresh tomatoes stirred with mozzarella cheese, chopped basil, minced garlic, olive oil, salt and pepper. Just let the heady mix steep for a few minutes, toss with warm pasta, and cool before serving.

Taste a late summer harvest in a colorful pasta sauce that needs no cooking. Simply stir cooked corn, chopped tomatoes and sliced green onions into a dressing of olive oil, red wine vinegar and basil. Toss with hot pasta and sprinkle with Parmesan.

Bright red tomatos are peeled and chopped and cooked very briefly with tomato paste and sauteed garlic to make a fresh and colorful sauce for hot pasta. Stir in fresh basil just before combining the sauce with the pasta, then top with Parmesan cheese.

This is simply delicious, with the emphasis on simple. Rigatoni is cooked with garlic until al dente. Then tomatoes are cubed, sprinkled with basil and oil, and plopped in with the rigatoni to mingle and cook a bit more. Toss and eat.

Use cream sherry to enrich a tasty mix of tomatoes, garlic, basil, mint, olive oil and hot pepper flakes. After steeping for two hours, use some of the liquid to flavor hot pasta. Add Asiago and fontina cheese, then toss everything together.

This savory layered pie is a great luncheon or supper treat. Pile slices of onion and tomato into a pre-baked pie crust. Spread with a mixture of mayonnaise, and Parmesan and mozzarella cheeses, and then bake in the oven until golden brown. Serve with sour cream and fresh herbs.
