This bread had great flavors and light texture. I do think it was a bit on the sweet side (and I love sweet things!). I even added an extra half cup of cranberries. Next time I will cut the sugar by at least 1/4 cup to see what happens, and the recipe can probably handle 2 cups of cranberries. To make this somewhat healthier, I used half whole wheat pastry flour and substituted sugar free applesauce for the oil. This recipe is definitely a keeper!

Made as is; however, I did not have pumpkin pie spice. Called sis and she said her bottle of pumpkin pie spice contained cinnamon, ginger, and nutmeg. So I used 3 t. cinnamon, 1 1/4 t. ginger, and 3/4 t. of nutmeg. Turned out wonderful!!!

So good! Great easy recipe. Makes amazing moist tasty pumpkin bread. I have made it several times now and it is always a hit. If you don't have orange juice, cranberry worked as a substitute.

This is a great holiday bread! It turned out nice and moist. Next time, I'll definitely increase the cranberries, maybe to 1 1/2 cups. Chopped walnuts would be a nice addition, too.

I stayed in on a rainy day and made 6 of these!! I had to kick my 8 year old out of the kitchen because she couldnt quit munching on them!!! Great recipe....very easy, cutting berries in half is a great idea!

I have been making pumpkin bread for weeks now and decided to make a Cranberry bread. I found this recipe and still had pumpkin leftover so I made this with a few changes (whole wheat flour, egg beaters instead of eggs, and applesauce instead of oil). Of all the pumpkin breads I have made this year this one is THE BEST. Moist and delicious.

I didn't have orange juice so I left it out and didn't have pumpkin pie spice so I substituted cinnamon and nutmeg. I've been bringing goodies for the past few weeks to work and this by far has been the favorite of everything I've brought. I'm now known as Evil Betty, as in Betty Crocker at work because I keep plying everyone with goodies.

Amazing. I also added some orange zest too. I took it to work and they couldn't stop eating it. Im glad I had some friends who had some frozen cranberries because i couldn't find any, since its May and they aren't in season.

This is a standard "impress the co-workers" recipe! I use frozen blueberries instead which goes really well! I find the cranberries too sour.

I too made these for gifts and everyone loved them. I was even paid by one of my coworkers to make this for her and her family on Thanksgiving, and then again on Christmas! Very moist, flavorful bread. I love it the way it is, but I love it even more with another cup of fresh or frozen cranberries, I am a Jersey girl afterall. :P

Very yummy bread. I added pecans but kinda thought that I should not have done that...it just wasn't needed. I would increase the cranberries next time since I love the tangy-ness of them. Good to give as a gift.

I was a bit uncertain about putting cranberries in pumpkin bread but I had both ingredients I needed to use so I gave it a shot. The result was fantastic, amazingly moist and flavorful. I used 1c of white-wheat flour and you would never know from the texture. I would have liked more cranberries, just 1c for 2 loaves and there was only 1 or 2 per slice, so next time I'll probably double them. This is a keeper!

Great flavor! Incredibly moist! I used 1/2 applesauce, 1/2 oil- and split the flour 1/2 whole wheat, 1/2 ap flour. I added in some walnuts. Very tasty and moist! Thanks

Excellent. Tasty and moist. I used 1/2 cup of oil and 1/2 cup applesauce to sub for the 1 cup of oil. I also added just a dash of freshly grated nutmeg. I put them into mini loaves and gave them as gifts to friends.
