I have made this several times and it is always well received by my family. I usually omit the vinegar (the husband is not a fan). I have made it with leftover ham after the holidays and it is delicious!

This is a great recipe but per a recommendation, we used balsalmic vinegar which I don't think matched the flavor of the soup. It now tastes like great lentil soup with balsalmic vinegar in it. It's not bad, but the balsalmic flavor stands out rather than blending in to enhance the flavor as a whole. Next time, I'll probably use red wine or apple cider vinegar.

Very tasty! I also made substitutions based on Blankin's comments. I added 1 extra stick of celery, 2 more carrots, 2 cans of tinned tomatoes, 1 chicken oxo cube, 1 veg oxo cube, some chilli flakes, another clove of garlic, and just before serving 3 tablespoons of port and juice of 1 lemon, then blended the whole lot! Yummy!

Great savory, easy, and healthy recipe! And room to customize! I went with several other recommendations to double the spices, and double the carrots. I had some fresh tomatoes that I chopped into medium pieces instead of using canned. You might find you like it more "soupy" and want to add a couple cups of water during the cooking process. And finally, instead of using balsamic vinegar, I used about half a can (about 3 oz) of tomato paste (not a huge fan of vinegar). Be sure to add salt after the beans have cooked! Followed another reviewer's lead and put some cut up spicy sausage in my BF's bowl. Served with some garlic bread to dunk with, delicious and healthy!!!

This was really good! I made a batch for my family and even my dad[the vegetable hater] liked it! I used ~7 cups of water, two bay leaves, and more celery and carrots. Mmmmm!!

Yummy it was good I made a huge batch of this and it was all gone I did add some tumeric and cumin to it and I used low sodium veggie stock.. will definitely make again!!!

I tweeked it a bit too. Adding vegetable broth w/ 4 cups of water. No tomatoes. Added turmeric. It is Fantastic! A delicious recipe, easy to manipulate and simply delicious!

Wow this recipe is amazing! The flavor exceeds my expectation. I adjusted the ingredients a little bit and it came out great. I eliminated spinach and vinegar, added 48 oz (5 cups) chicken broth plus 2-3 cups water, used 4 carrots instead of 2, and added 1/2 cube vegetable bouillon for rich flavor. My guests said this soup is amazing! One of the best soups I ever made! Thank you.

This was very easy and delicious. I enjoyed it while I was on a diet - it's very healthy. I added some chopped eggplant because I had it on hand. Not so traditional, I know but it was good. I plan on making this again soon as the weather is getting cooler.

I have made this recipe many, many times, and it's always delicious. I usually add random vegetables I happen to have on hand, and it's always good. I sometimes use vegetable stock for more flavor. The spinach and vinegar (usually red wine vinegar) really complete this dish. I usually serve it with homemade pita chips on the side. Delicious.

Very tasty, but made changes due to what I had. I used 1 onion, 5 carrots, 1/2 pkg turkey kielbasa sausage, jarred garlic, basil, 2 bay leaves, 4 potatoes, lentils, 2 small cans original Rotel (which gave it just a little heat), 12 cups of water and finally salt & pepper. It was quite filling & very healthy! My only complaint was that the carrots were a little too soft for my liking. Next time I'll add them a little later. I'll definitely be making this again during the cold winter months! Thanks!

Awesome soup. I made a few very minor changes because I didn't have everything in the list of ingredients. I added about 2 cups of cut up ham from a spiral ham I made a few days ago and simmered the soup with the ham bone too. I used baby carrots and jarred crushed garlic. I didn't have any spinach so I left that and the vinegar out. It was superb! Thanks for sharing!

LOOOVE this recipe! I have made it numerous times and occasionally tinkered a bit with the ingredients (added sausage, more spinach/and or garlic, 28 oz can of crushed tomatoes)... all variations were very tasty and satisfying. I do prefer to substitute chicken broth for the water ... this recipe is a winner.

It was okay. Not enough vegetables and too many lentils, making it bland, in my opinion. Also I had to add so many spices and salt to make it taste okay. Probably won't be making this again, but it is a decent base recipe.
