1 medium onion, chopped
3/4 cup thinly sliced celery
1 garlic clove, minced
1 tablespoon margarine
2 quarts water
1 (28 ounce) can diced tomatoes, undrained
1 (1.8 ounce) package vegetable soup mix
3/4 cup dry lentils
3/4 cup medium pearl barley
1/4 teaspoon pepper
2 medium carrots, thinly sliced
1/2 cup shredded reduced-fat Swiss cheese (optional)

DIRECTIONS
In a soup kettle or Dutch oven, saute onion, celery and garlic in margarine until tender. Add water, tomatoes, soup mix, lentils, barley and pepper; bring to a boil. Reduce heat; cover and simmer for 45 minutes or until lentils and barley are tender. Add carrots; simmer 20-25 minutes longer or until the carrots are tender. Garnish with cheese if desired.

Nutritional Analysis: One 1-cup serving (prepared without cheese) equals 125 calories, 405 mg sodium, trace cholesterol, 23 gm carbohydrate, 5 gm protein, 1 gm fat. Diabetic Exchanges: 1-1/2 starch, 1 vegetable.

This is a fantastic winter meal - easy, healthy, delicious, and filling. I've made it a couple of times now. I use olive oil instead of margerine and chicken broth (or vegetable broth for a vegan meal) instead of water and soup mix, and I add whatever vegetables I have around. I'm making this a regular item on our family menu.

When I think "soup", I think onions, celery and carrots. They're in here. When I think "winter", I think barley (or rice). In here. And when I think "favorite family foods", I think lentils. In here, too. I can my summer tomatoes so I substituted 4 pints of my "homegrown" for the canned. I used butter instead of margarine and I flavored my water with 10 Low Sodium Beef Bullion cubes (instead of the vegetable soup mix), additional garlic, a Bay Leaf (which I removed prior to serving), tarragon, parsley, cayenne pepper and basil. During the last 10 minutes of cooking, I tossed in the meat (diced) from 5 pre-cooked pork chops. Garnish with either Swiss, Cheddar, Parmesan or Provolone cheese and serve with a loaf of crusty bread and a fruit bowl and you've got yourself one of the heartier, healthier and most economical meals you'll ever enjoy. (Oh, yes, almost forgot: salt and pepper to taste)

This soup has GREAT texture! It tastes very fresh, not too tomato-ey. I like a lot of broth in my soup, so I added an extra cup of water and and extra 1/2 packet of vegetable soup mix I had in the cupboard. You may want to add a little salt, but that's it. Thanks for this recipe!

I really liked this recipe. I modified it by using vegetable broth as a base instead of water and soup mix. I also added zucchini, which was a nice touch.

I was all out of tomatos, so I had to leave that out. I added my own curry blend because I like things a little hot. Other than that I followed the recipe and I love it. I just let it simmer in my Dutch oven all day and it came out great. I'll definitely be making this again, it does not have to be just a cold weather thing.
