This was actually pretty good, considering how quick it was to put together. I was looking for a soup to use up some leftover turkey from the holiday. I don't normally care for homemade soups that have a can of soup in them. This one worked for me though, and I liked that the cook time is all of 5 minutes! I made rice the night before, in my rice cooker, so that did save a lot of time too. I used 3 boullion cubes and halved the black pepper. So, when I first tasted it, I thought it was awfully salty. When I added the lemon juice, last 1/2 of cup of water with the cornstarch, and chopped cilantro it was a lot more balanced. It had a good thick consistency from the rice and cornstarch to water ratio. It reminded me a lot of Greek chicken lemon rice soup. ty

Good soup- I used turkey stock from the roasted turkey and the leftover meat. Used parsley instead of cilantro. I didn't have to salt it because I had brined the bird and the stock was already salty. I also used uncooked rice and cooked in stock before adding anything else for 30 minutes. All I did was add another cup and a half of water for the rice to soak up. Easy and wholesome!

Yummy. I love the flavor of this soup. It reminds me of hot and sour soup in my favorite Chinese restaurant without the spice. The only change I made was to use cumin and coriander as I was out of fresh cilantro. I may add onions next time for additional flavor, but this recipe is fine without changes.

Made the broth from my turkey carcass boiling it on low with discarded onion tops, celery and carrots for about 4 hours. Used the turkey meat hand peeled off the bones. Only used half the lemon amount in recipe, added a quarter block unsalted butter, a couple of shakes of garlic powder and Wallah! A very very good soup!!!!

I only cook for my husband and I so I didn't want to make such a large amount. I changed the serving size and added a bit more rice and turkey and it was great! My husband loved it. I also took the advice of other cooks and decreased the amount of lemon. It was perfect.

This was super easy and extremely tasty. My turkey had been smoked which probably added a little extra flavor - but the soup was amazing. The only change I made was to make it with orzo instead of rice. The orzo absorbs the flavor a little more than rice would. Will definitely make again!

I just made this soup and it came out delish! I used half the amount of lemon juice then added a little lemon zest which made it perfect. I'm thinking of adding more broth & orzo pasta next time.

Great recipe.Followed the recipe in order except added another cup of turkey. I also added chopped spinach and 1/2 cup of chopped celery to make it more chunky. I reduced the lemon juice to half of the 1/4 cup. Lastly, I threw in a dash of rosemary. My husband loves it..Thanks for sharing
